A cut above the rest: Japan's legendary Kobe beef

Why Wagyu is the best eating in Japan -- and the truth about beer and massages for cows

Melt-in-your-mouth goodness -- the stuff of (meat-based) legends.

“To really understand Kobe beef, you have to chew it thoroughly, deliberately, to appreciate the texture,” said Michihiko Saito, head chef at the Kobe beef specialist 511 (pronounced “go-ichi-ichi”) in Akasaka.

As he spoke, he mimicked the act of chewing with his hands, moving his fingers up and down like a puppeteer bringing a slow-munching Pac-Man to life.

“Of course,” he continued, “the biggest difference between Kobe beef and other kinds of Wagyu is the flavor of the fat.”

I nod, recalling my first encounter with top-quality Kobe beef, at a high-end kappo restaurant in Ginza.

At that time, I’d been a skeptic. Having enjoyed plenty of choice steak in my lifetime, I’d suspected that the only thing truly exceptional about Kobe beef would be the price.

It only took one bite to change my mind. The crispy seared surface gave way to a buttery texture that melted in my mouth and sent a wave of dopamine-inducing umami across my palate.

It was an intense experience, one that reminded me of tasting ice cream for the first time as a child.

More art than food

Kobe beef is a Japanese delicacy whose reputation precedes it. The very mention of it conjures images of decadence.

The highest grades of Kobe beef can contain up to 25 percent fat, and the thin slices of it used for shabu-shabu look more like delicate pieces of lacework than steak.

Top-grade meat is versatile too. Beef as sushi -- who knew?

Astonishingly expensive, with retail prices averaging ¥30,000 to ¥40,000 per kilo, Kobe beef infiltrated the global consciousness during the bubble-inflated 1980s. Like sushi, it’s become one of Japan’s most iconic edible luxury items.

While the word “Wagyu” is used to describe beef produced from several varieties of Japanese Wagyu cattle, Kobe beef refers specifically to cuts of meat taken from the Tajima breed of cow, a squat, barrel-chested bovine with a glossy black coat.

To obtain Kobe certification, the cows must be born, raised and slaughtered in Hyogo Prefecture, and the meat is never exported.

Only around 3,000 heads qualify as Kobe grade annually, with each animal yielding about 400 kilos of beef.

Beer and massages

Rumors that the pampered cows are given daily massages, soothed to sleep with Mozart sonatas and fed a steady diet of beer have elevated Kobe beef to almost mythical status. Such stories still persist, but Saito dismisses most of them as colorful fictions.

“The cows do not drink beer,” he told me, before pausing to add, “but they do get massages.”

With his spiky, copper-colored hair and boyish features, Saito could easily be mistaken for a student. But his youthful appearance belies considerable experience.

Grilled steak -- a more traditional approach to preparing meat.

Before becoming a chef, Saito had spent 10 years working as a butcher in Kobe and he’s one of the few Tokyo chefs licensed to bid on Kobe cows at auction.

Unsurprisingly, experience is the key to picking the best specimens.

Bidders are shown only a cross section of the ribs. In a matter of minutes, they have to estimate potential yield and quickly assess the quality of the beef, based on factors such as color, brightness, firmness and texture.

“You can’t touch the meat itself because the fat will start to melt under your fingers (at 25 C),” Saito explained.

“You have to rely on your eyes, and I always try to look for very thin veins of fat -- that means the meat will be tender.

Germany reportedly mulling e-car subsidies

The German government is reportedly considering splashing out billions of subsidies for e-mobility efforts in order to help meet its goal of getting a million electric cars on the nation's streets by 2020.

Daily Bild reported on Thursday that Chancellor Angela Merkel's cabinet this month plans to make electric cars exempt from taxes usually placed on motor vehicles for ten years.

Electric cars currently cost, on average, several thousand euros more than their combustion-engine counterparts. The government hopes that if the tax burden is lifted, buying an e-vehicle will become more attractive than buying a regular car.

Merkel's administration also wants to put thousands of electric cars in service for government agencies, and double research funding to a total of €1 billion by 2013.

The car industry, for its part, has already called for billions more in subsidies.

The Frankfurter Allgemeine Zeitung reported this week that the National Electric Mobility Platform (NPE), a body consisting of government, research and car industry officials, argued the additional funds would eventually pay dividends in new jobs and revenues.

Pattaya is the best beach one in Thailand..that i always recommend..after crisis time..in Bangkok more than several weeks..i had been worked in Sriracha ,Chon buri...that near Pattaya...although i had been appreciated in the fantastic special area administration another one of Thailand for long time...but the difference between our special area is difference from special economic zone as if specific zone in china...the china policy y is crew inside under support about many businesses...difference from Pattaya or Bangkok...only couple special zones of us..so i losses my surprise about..why my foreigners business friend fly to re born their busines

(1) ศึกษา วิเคราะห์ วิจัย เพื่อสร้างองค์ความรู้ การเสนอความเห็นเกี่ยวกับความร่วมมือด้านต่างประเทศ การแสวงหาและเร่งรัดการดำเนินความร่วมมือเชิงรุกกับองค์กรระหว่างประเทศและนานาชาติ เพื่อให้เกิดประโยชน์สูงสุดแก่ประเทศ

(2) ให้ข้อเสนอแนะ รวมทั้งกำหนดแนวทางและพัฒนาระบบการติดตามประเมินผล รวมทั้งแนวทางการแก้ปัญหาข้อขัดข้องในการปฏิบัติงาน เพื่อให้การดำเนินงานเป็นระบบและมีประสิทธิภาพ

(3) ให้คำปรึกษา แนะนำ เสนอความเห็นและข้อเสนอแนะในการกำหนดยุทธศาสตร์และนโยบายความร่วมมือด้านการต่างประเทศ เพื่อให้สอดคล้องกับนโยบายและแผนพัฒนาเศรษฐกิจและสังคมของประเทศ

2. ด้านการวางแผน

วางแผนหรือร่วมดำเนินการวางแผน โดยเชื่อมโยงหรือบูรณาการแผนงาน โครงการในระดับกลยุทธ์ของส่วนราชการระดับกรม มอบหมายงานแก้ไขปัญหาในการปฏิบัติงานติดตาม ประเมินผล เพื่อให้บรรลุตามเป้าหมายผลสัมฤทธิ์ที่กำหนด

3. ด้านการประสานงาน

(1) ประสานการทำงานโครงการต่าง ๆ กับบุคคล หน่วยงาน หรือองค์กรอื่น โดยมีบทบาทในการจูงใจ โน้มน้าวเพื่อให้เกิดความร่วมมือและผลสัมฤทธิ์ตามที่กำหนดไว้

(2) ให้ข้อคิดเห็นและคำแนะนำ แก่หน่วยงานระดับกองหรือสำนัก รวมทั้งที่ประชุมทั้งในและต่างประเทศ เพื่อเป็นประโยชน์และเกิดความร่วมมือในการดำเนินงานร่วมกัน

4. ด้านการบริการ

(1) เป็นวิทยากร เผยแพร่ความรู้ ให้คำปรึกษา แนะนำและวินิจฉัยปัญหาเกี่ยวกับงานด้านต่างประเทศที่สำคัญแก่บุคคลหรือหน่วยงาน เพื่อให้สามารถดำเนินงานได้ลุล่วงเป็นไปตามนโยบายและแผนงานที่กำหนดไว้

Bayern host relegation-candidates Hanover at Munich's Allianz Arena on Saturday evening, while second-placed Schalke will be bidding to close the two-point gap with four games remaining against Mönchengladbach.

After this weekend, Bayern face 'Gladbach, Bochum and bottom-side Hertha Berlin while Schalke take on Hertha, Werder Bremen and Mainz with the season set to finish on Saturday May 8.

"I'm really looking forward to the run-in," said the Argentine star who is currently wearing a face mask after picking up an injury in his country's 1-0 friendly win over Germany last month. "This is when we can show what we're capable of."

The 29-year-old must wear the mask until the end of the season, but Bayern coach Louis van Gaal will be happy to have him in the side - Munich are undefeated in all Bundesliga and cup fixtures in which Demichelis has started this season.

Hamburg’s famous Alster swans returned to the water few weeks late on Monday as this year's brutally long winter prepared to give way to springtime temperatures this week.

After more than four months in their winter quarters, Hamburg's “swan father” Olaf Nieß lead several boats to move 120 birds to the port city’s outer Alster lake.

The animals will now be able to find sufficient food on their own, a spokesperson from the Hamburg-Nord district said.

At the end of the November the swans made their traditional trek to their winter retreat in the Eppendorf district’s mill pond, which is kept free of ice year round.

They have been a part of the city landscape since the 11th Century, under the care of a “swan father” - Hamburg’s oldest municipal post – since 1674.
